UDP 헤더 전체를 read하시려면 IPRAW로 socket을 open하셔서 UDP Protocol을 만들어 사용하셔야 합니다.
W5500에서는 UDP 헤더 대신에 위와같은 PACKET INFO를 제공하고있습니다. packet info에서 size를 read하시어 처리하실 수 있을 것 같습니다.

헤더를 읽어야 하는 특별한 이유가 있을까요?
UDP헤더는 아래 그럼처럼 source port/ destination port/ length /checksum 입니다.
