You might want to check the setSHAR(shar) macro inside the W7500x_wztoe.h.
Something like this might work:
uint8_t mac_addr = {0x00, 0x01, 0xDC, 0x34, 0x35, 0x35};
setSHAR(mac_addr);

Did you check your local router to see if the device is there? You may want to check your DCHP routines too.
